Sales & Operations Manager

About the role

We’re hiring a hands-on Sales & Operations Manager to run day-to-day store operations and drive commercial performance across our ethnic grocery and halal meat offer. This is a “lead from the front” role covering stock, suppliers, pricing, displays, team leadership, compliance, customer service and checkout - ensuring the store is always adequately stocked, service and store delivery remain fully optimised to create an engaging customer experience.Key Responsibilities.

1) Store Operations Leadership (Daily Ownership) 

  • Take full shift ownership of store operations, ensuring high standards across shopfloor, back-of-house and meat counter.
  • Plan daily priorities, allocate tasks, and maintain smooth execution during peak periods.
  • Ensure a clean, organised, customer-ready store at all times.
2) Stock Management, Procurement & Supplier Management (Perishable + Non-Perishable + Meat)
  • Own end-to-end inventory control (ambient, chilled, frozen, fresh produce, and halal meat).
  • Create and manage purchase orders, maintain reorder routines, track lead times, and ensure availability of key lines.
  • Receive deliveries, verify accuracy/quality, manage returns/credits, and resolve supplier issues quickly.
  • Manage FIFO/FEFO rotation, date-code checks, waste reduction, and shrink controls.
  • Maintain accurate stock records and support periodic stock takes/cycle counts.
3) Halal Meat & Fresh Counter Operations (Standards + Availability)
  • Oversee halal meat counter performance (working closely with butchers), ensuring excellent availability, hygiene and presentation.
  • Ensure correct handling/storage, cleaning routines, and compliance readiness aligned to UK food safety expectations.
  • Support product knowledge, customer guidance, and high standards of service at the counter.
4) Retail Pricing, Promotions & Discounting
  • Set and maintain retail pricing, price integrity, and promotional/discount activity within agreed policy.
  • Monitor margins, competitor sensitivity (where relevant), and performance of key value items.
  • Use sales and stock insights to optimise price packs, promotional choices and end-cap features.
5) Shelves, Displays & Store-Focused Visual Merchandising
  • Own shelf standards: planograms (where used), replenishment discipline, faced-up aisles, clear signage, and tidy bays.
  • Build effective promotional displays that are store-brand focused and customer-friendly.
  • Ensure seasonal/thematic merchandising (e.g., Ramadan, Eid, festival peaks) is executed professionally.
6) Customer Service & Front-End (Checkout) Performance
  • Set a visible service standard: greeting customers, resolving issues, handling refunds/exchanges, and improving satisfaction.
  • Maintain fast, accurate checkout operations (queue management, till discipline, cash handling procedures).
  • Coach the team to improve basket-building and helpful recommendation behaviours without hard selling.
7) Security, Shrink & Incident Management
  • Implement practical controls to reduce loss (high-risk product checks, receiving controls, CCTV awareness, till compliance).
  • Handle incidents calmly and professionally and ensure appropriate escalation and reporting.
  • Maintain security routines for opening/closing, cash handling, and back-of-house access control.
8) People Leadership, Scheduling & Training
  • Manage store team scheduling, rota planning, breaks, and coverage across butcher counter, tills and floor staff.
  • Train and coach colleagues on product knowledge, service, hygiene routines, safety, and store standards.
  • Maintain readiness for hygiene/security/fire/safety checks (daily/weekly routines, logs, and corrective actions).
  • Support performance conversations and build a positive, accountable team culture.
What we’re looking for (Person Specification)

Essential
  • Right to work in the UK and available to work on-site.
  • Minimum 1 year experience in retail or service operations (food retail, consumer goods retail, and convenience).
  • Strong knowledge of halal meat products and confidence working around fresh food operations.
  • Proven ability to manage suppliers, stock control, deliveries, rotation, and wastage reduction.
  • Comfortable leading a small team and operating in a fast-paced environment.
  • Strong customer service instincts with confidence handling issues and maintaining standards.
  • Technically confident: able to use POS/till systems, inventory tools, spreadsheets and basic retail tech solutions.
  • Analytical mindset: comfortable using sales/stock reports, margins, wastage/shrink indicators and KPIs.
Desirable
  • Master’s degree in Marketing and/or allied faculties (preferred).
  • Experience with pricing strategy, promotions and retail merchandising in consumer goods.
  • Experience working in ethnic grocery retail (Arabic/Turkish/Iranian/Indian/Pakistani/Bangladeshi) and understanding cultural seasonal peaks.
  • Hands-on experience with start-up operations creating progressive revenue pipeline and business model.
