Shan's Fried Chops/Steaks Masala is built for a different technique than anything else in this range, it's a dry rub applied directly to flattened mutton chops or beef steaks, rather than a curry base or a grill marinade. The blend brings together red chilli, paprika, dried papaya, black pepper, cumin, brown cardamom, cinnamon and aniseed, with the dried papaya helping to tenderise the meat.

How to use it

Flatten your chops or steaks with a meat hammer, rub the masala in evenly, and leave to rest for around 2 hours. Heat oil or ghee, add the meat and stir-fry for a few minutes, then cover tightly and cook on very low heat for 10-15 minutes until tender. Serve as an appetiser with fried potato slices, green chutney and tomato ketchup.
